Description: A soft-textured cheese, with a pale straw colour and unique flavour. Intense and harmonious, ranging from delicate to tangy, with a lingering and intriguing aftertaste. Cylindrical in form, with a semi-hard, straw-coloured rind, this cheese is characterised by its firm texture with tiny holes which give rise to the highly prized lacrima – rich drops of whey which appear in the small holes formed during the fermentation process.
Properties: Dense texture, with a golden, straw-like colour. A decisive yet delicate flavour.
